Bjarne Jespersen is a sculptor who creates beautiful mathematical carvings (below).  I have bought his book Woodcarving Magic and can't wait to get started! It contains some really interesting mathematics, for example how to cut a 'simple' Platonic solid from a block of wood.

Nick Sayers is an artist/sculptor from Brighton who uses maths in his work.  He uses found objects to make beautiful sculptures, often involving a human element.  A brochure outlining some of his projects is here.  

I had the pleasure of meeting him at a demonstration of his giant pantograph.
